From the first of October the Italian truffle season begins in Central and Northen Italy. The trifolau (Truffle hunters) and their dogs are seeking the elusive funghi, the Truffle fairs are held and on every menu dishes celebrating this distinctive fungus abound.
Nestled in the cool dirt eight to ten inches below the surface the Truffle requires specially trained dogs (of the breed Lagotto Romagnolo) to seek it out. As truffles only occur naturally in the soil surrounding certain trees, and attempts to grow them artificially have proved unreliable, Truffle hunting is a serious business. The location of the Truffles is, in many cases, a closely guarded family secret passed down from generation to generation.
